Ingredients

  • 2 14.5-ounce cans diced tomatoes
  • 1 15-ounce can garbanzo or kidney beans, rinsed and drained.
  • 1 15-ounce can black beans, rinsed and drained
  • 1 15-ounce can water
  • 2 cups frozen corn
  • 1 large onion, chopped (about 1 1/2 cups)
  • 3 to 4 teaspoons chili powder
  • Black pepper, to taste
  • Optional: Shredded cheese or meat

Instructions

  1. Put all ingredients in a large pot. Heat to boiling over high heat.
  2. Reduce heat and simmer about 20 minutes or until hot, sitrring occasionally. If desired, top each serving with a tablespoon of shredded cheese.

    Either there is a can of beans missing from this recipe or you should rename it “Two-Bean Chili”.

    Question: I’ve noticed chili recipes often call for frozen corn? Is is cool to use canned corn? Does it taste that much worse?

    Canned corn would work also. The taste is a little different and it has more sodium unless you buy the no salt added version.

    We usually use frozen corn because the sodium content is lower, but canned could also be used. Peggy

    I really want to try this recipe at home. I like that there is no meat in this dish. I have a family of five, so buying meat can get expensive.
